Roasting the garlic gives this soup a unique sweet taste. If you love garlic, this soup is a must!
INGREDIENTS
2 bulbs (yes bulbs, not cloves) of garlic
1 chopped onion
1 Tbsp oil
1/2 Tsp pepper
1/2 Tsp salt
3 cups chopped carrots
1 large chopped potato
5 cups vegetable broth
PREPARATION
Wrap the garlic bulbs in foil and place in a 250 degree oven for 1 hour. Remove and peel the cloves.
Fry the onion, pepper and salt in the oil until onion is translucent.
Combine all ingredients in a large saucepan, bring to the boil, and simmer for 20 minutes.
Allow to cool and puree.
