This is a very simple but tasty recipe. Use in the summer months when the zucchini are fresh from your garden.
1 dozen shrimp (fresh always preferred to frozen)
chopped garlic
2 large zucchini (cubed)
olive oil
salt and pepper
Drizzle olive oil into a heated pan. Add shrimp to dry out any excess water. Add chopped garlic and saute for about 1 minute. Add cubed zucchini. Add water to pan and cook until zucchini are tender. Before serving, add salt and pepper to taste.
This can be used as a side dish or tossed with cooked spaghetti.
