This is a very traditional and classic Italian soup. It's simple yet hearty and the ingredients are usually at hand or readily available. It makes for a great winter soup or after a day of skiing.

4 eggs
1/2 cup grated Parmesan cheese
2 tbsp fresh parsley, finely chopped
Pinch ground nutmeg
To taste salt and pepper
6 cups chicken broth

In a bowl, beat eggs with a fork until they are just blended. Mix in cheese, parsley, nutmeg, salt and pepper.

In a medium saucepan, bring broth to a boil. Pour in egg mixture slowly while stirring gently and constantly with a whisk.

Reduce heat to low. Simmer, still stirring, until eggs are cooked, 2 to 3 minutes.

Serve with toasted french bread drizzled with olive oil.

I am not very fond of Italian food but this recipe is very simple to cook. I am not sure what is Parmesan cheese, I tried it with regular cheese. It turned out to be good. Thank you for adding an Italian taste in my life.
