Yield 4 4-6oz pieces of Salmon (Wild if it’s in season) Cook your salmon however you like to, I prefer frying mine in a good pan with some Olive oil, a squeeze of lemon, some dry thyme and of course season it with salt and pepper. On a medium heat it shouldn’t take longer than 15 mins depending on how thick your salmon is. For the Basil Tomato Oil On a medium high heat add olive oil, when you can tell it’s getting hot add basil, tomato and garlic and heat for about 4 mins and remove from the heat. To plate your salmon simply spoon the basil tomato oil on top of the salmon, serve with rice and asparagus or another of your favorite starch and veg combos. Happy eating! |
