Katarina_HD![]() | Made this last night and it was delicious! With summer you can get the best tasting ripe tomatoes so here's the sauce that makes the most out of them: Buy ripe Roma tomatoes or plum tomatoes. Ripen them in the sun a few days if need be. Wash them, prick them with a fork and place them on a baking tray and bake in a 400 degree oven for about 20 minutes. Take them out when they start to 'bubble'. You can either chop them up or strain them in a hand held stainless steel food mill so as to remove the skin and seeds (this is what I do and I prefer it to just chopping). Heat up some olive oil and saute chopped garlic and onions, then add the baked and now pureed tomatoe sauce or chopped tomatoes. Cook on low heat for about 20-30 minutes, add salt and a pinch of sugar to take away the acidity and you will have the best tasting home made tomatoe sauce ever! I also buy a bushel of ripened plum tomatoes from the farmers market at the end of the summer and freeze them in freezer bags for use in the winter. I just repeat the whole process as above with the frozen tomatoes, only leave them in the over about 10 minutes longer. Hope you enjoy. |
