Katarina_HD![]() | This is a very traditional and classic Italian soup. It's simple yet hearty and the ingredients are usually at hand or readily available. It makes for a great winter soup or after a day of skiing. 4 eggs In a bowl, beat eggs with a fork until they are just blended. Mix in cheese, parsley, nutmeg, salt and pepper. In a medium saucepan, bring broth to a boil. Pour in egg mixture slowly while stirring gently and constantly with a whisk. Reduce heat to low. Simmer, still stirring, until eggs are cooked, 2 to 3 minutes. Serve with toasted french bread drizzled with olive oil. |
